Lenoir Hall Dining

Lenoir Dining is an educational operation within the department’s Hospitality Management and Dietetics and Nutrition programs.  Housed in Lenoir Hall, this non-profit 40-seat teaching laboratory offers students hands-on experiences in all facets of restaurant operations.

Students enrolled in the 5 credit hour lecture and lab of Quantity Food Production and Services learn from the opportunity to operate a restaurant for the University and Oxford community.  The course covers principles and fundamentals of quantity food production and service in commercial and institutional operations, menu planning, recipe standardization, human resource utilization, hazard analysis of critical control points, and costing.

Throughout the semester each student will rotate through various positions within the operation; ranging across service, cooking, and management functions. Click here for the featured article on Lenoir Dining that appeared on the Applied Approach Newsletter in spring 2007.
