Dr. Oakley has been involved with NFSMI since 1989 before there was an institute.  Dr. Oakley gave a brief history of how the Institute came to Ole Miss.  NFSMI was highly sought after by many universities across the country.  Mississippi was a logical choice for the location of the NFSMI because the State of Mississippi had a high participation in the National School Lunch Program.  The University of Mississippi was involved in training programs for child nutrition, which lead to the University of Mississippi being selected for the location to build the NFSMI.

Dr. Oakley stated that NFSMI meets the educational and training needs for the funded child nutrition programs.  This is the only institution of its kind.  USDA is a partner to research, education, and training.  The government provided the funding for the construction of the building.

NFSMI is staffed by 30 full time employees.  NFSMI does everything from financial management, media planning, to food safety.  Dr. Oakley stated that there are over 30 million school lunches and 30 million school breakfasts served daily.

Dr. Oakley said that they love what they do.  She also stated that the staff of NFSMI feels that if they come to work everyday, do the best that they can, be accountable for their resources, and make the most of their resources that they will improve the quality of life for the children of this country.

Beverly Cross gave the Staff Council an impressive tour of the NFSMI.
